KFB Foodie Talk: How to make chicken suya at home

Today, Dobby discusses how to make Chicken Suya.
I love love love chicken
suya. What's not to love about it! Chicken, groundnut spice,fresh
tomatoes and onion is the perfect combination. Add chilled drinks to the
mix and you're ready to "parrrraaaayyy" this weekend :D.
Yesterday, i
made chicken suya for the fam and the compliments haven't stopped
pouring in. Apart from filling the whole place with positive vibes, it
also gave the home a wonderful aroma. I doubt if there's anyone who gets
tired of suya, definitely not me.
Chicken suya can best be described as the quintessential Nigerian street delicacy and is mostly prepared by the originators; The Hausas, which is one of the largest ethnic groups in west Africa. It's therefore not unusual to find it being sold around every corner.
How to make Chicken Suya
• Prep Time: 40 minutes
• Cook Time: 20 minutes
• Total Time: 1 hour
• Misc : Serve hot
You'll Need:::
• Bamboo skewers
• Aluminum foil

How to make Chicken Suya

You'll Need:::
• Bamboo skewers
• Aluminum foil
Ingredients:::
• 1 kilogram Skinless chicken (de-boned)
• 2 tbsp. Suya spice
• 3 tbsp. Vegetable oil
• Salt to taste
For Garnish:::
• Onion
• Fresh tomatoes
• Cucumber
Directions:::
Step 1: In a small bowl, mix the suya spice, vegetable oil and salt to taste together - Set aside.
Step 2: Soak the bamboo skewers in water for about 20 minutes. This helps prevent it from burning in the oven once you start grilling.
Step 3: Chop
the chicken into small bite sizes with a knife and thread about 4-5
pieces on each bamboo skewer. Make sure you cover the skewer with
chicken slices.
Step 4: Place
the threaded skewers on an aluminum foil and lightly brush over the
spice mixture on both sides. Cover the threaded skewers with foil paper
and leave to marinate for about 20 mins. While it marinates, pre-heat
the grill to 450°F
Step 5: Place the skewers on the grilling rack and grill for about 10 minutes on each side until the chicken is fully cooked.
Step 6: Sprinkle with extra suya spice and garnish with chopped onion, tomato and cucumber. Serve hot.
